Vinification:
Traditional in white followed by a mutage (addition of alcohol) at middle fermentation. Ageing in inox tanks over fine lees then in bottle.
Tasting:
Aerial notes of citrus zest, honey, lavender and lemongrass. The mouth reveals freshness, purity, and an endless finale of candied notes.
Wine and food pairings:
To enjoy as an aperitif, on a foie gras or with a mousse of fruit, a sabayon, a quarter or just strawberries with whipped cream
