Bunches harvested in the cool of the early morning, fermented and macerated for 21 days with vigorous plunging daily for extraction until dry. Aged in new and old French and Hungarian and Russian oak barrels on lees for a ‘marathon’, 5 years without touching or racking for concentration and smooth roundness. This wine is just wonderful with rum raisin chocolate, a well seasoned rib eye fillet or kangaroo, but definitely suited for great company in a great mood!
Tasting Note
Nose of red and purple fruit confectionery, plum, cherry, blackberries and even a note of subtle blackcurrant syrup that carry through to the palate with extra notes of plum pudding, dusty cherries, floral pipe tobacco, monte carlo biscuit and fruit leather. Rich acid length with fine, elegant structure and refined tannins. There are no hard edges, just a fine line and length that’s stylish and lingering. Age for 10 years
